Spicy Sausage And Lentil Soup

- 1 pound hot Italian sausage shopping list
- 1 tablespoon olive oil shopping list
- 1 onion, chopped shopping list
- 2 to 3 cloves garlic, minced shopping list
- 4 celery stalks, diced shopping list
- 3 carrots, peeled and diced shopping list
- 2 medium russet potatoes, peeled and diced shopping list
- 8 cups chicken or vegetable stock shopping list
- 4 cups water shopping list
- 2 cups lentils shopping list
- 1 ½ to 2 teaspoons dried marjoram shopping list
- 1 ½ teaspoons dried savory shopping list
- Salt and pepper to taste shopping list
- Fresh grated Pecorino Romano to garnish. shopping list
How to make it
- 1. In large heavy saucepan, or medium stockpot, heat oil over medium heat; add onion and cook for 5 minutes, stirring occasionally. Add celery, carrot and sausage; cook for 5 minutes, Stirring occasionally. Add Garlic, cook and stir for 1-2 minutes. Add stock, water, lentils, marjoram and savory; bring to boil Reduce heat, cover partially and simmer for 30 minutes.
- 2. Add Potatoes; cover and simmer, stirring occasionally, for 35 minutes Or until lentils are tender. Salt and pepper to taste.
