How to make it

  • Heat oil in a large pan, add the bacon and cook gently, stirring occasionally, for some 3 to 4 minutes or so until slightly browned but not crisp:
  • Add onion, carrot, swede, red pepper and celery and cook gently, stirring occasionally, for some 2 minutes or so until slightly softened;
  • Add tomatoes, leeks and cabbage and continue to cook gently, again stirring occasionally, a further 8 minute or so;
  • Add stock, season, cover and bring to boil;
  • Simmer gently, covered, for some 20 minutes or until vegetables are tender;
  • Remove from heat, taste for seasoning and serve as is or "Blitz" with blender and serve

    sounds delish, Don, gonna try it as soon as I can get my mitts on the swede, the leeks and the cabbage...have everything else...will let you know the results...
