How to make it

  • Heat the oil in a large saucepan, add the garlic, onions, peppers and carrots and cook, on low heat, stirring occasionally, for some 4 minutes or so until they start to soften a bit;
  • Stir in the ground coriander, season and cook, stirring occasionally, for a further minute;
  • Add the stock, half the chopped coriander and increase heat to bring to the boil;
  • Reduce heat and simmer for some 15 to 18 minutes or so or until the vegetables are tender;
  • Remove from heat and “Blitz” with a blender until smooth;
  • Return to heat, taste for seasoning, and stir in the remaining fresh coriander;
  • Serve.
