Simple Carrot And Coriander Soup

- 1tbsp Vegetable Oil shopping list
- 1 clove Garlic - chopped shopping list
- 1 Onion - roughly chopped shopping list
- 450g/1lb carrots - sliced shopping list
- 2tbsp Red Pepper - finely chopped shopping list
- 1tsp ground Coriander shopping list
- 2 pints chicken stock shopping list
- Bunch fresh Coriander - chopped shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Heat the oil in a large saucepan, add the garlic, onions, peppers and carrots and cook, on low heat, stirring occasionally, for some 4 minutes or so until they start to soften a bit;
- Stir in the ground coriander, season and cook, stirring occasionally, for a further minute;
- Add the stock, half the chopped coriander and increase heat to bring to the boil;
- Reduce heat and simmer for some 15 to 18 minutes or so or until the vegetables are tender;
- Remove from heat and “Blitz” with a blender until smooth;
- Return to heat, taste for seasoning, and stir in the remaining fresh coriander;
- Serve.
