How to make it

  • Microwave directions: In a large bowl, combine cucumbers, onions, celery, carrot, bell pepper, garlic and salt, mix thoroughly.
  • In clean a pint or quart canning jars, pack the vegetable mixture into the jars, leaving room just below the neck of the jar for liquid to be added.
  • In 4 cup microwave-safe measuring cup or bowl combine all remaining ingredients. Microwave on HIGH for 2 to 3 minutes or until mixture boils. Stir to dissolve sugar. Pour hot vinegar mixture over vegetables; cover with tight-fitting lid. Invert jar; then turn upright to distribute spices evenly. Let cool and then refrigerate at least 24 hours to blend flavors before using. Store in refrigerator.
