- 3 cups thinly sliced, unpeeled cucumbers shopping list
- 3/4 cup sliced 1 -inch long green onion pieces shopping list
- 1/2 cup diagonally sliced celery shopping list
- 1/2 cup thinly sliced carrot shopping list
- 1 small red bell pepper, cut into strips shopping list
- 1 garlic clove, crushed shopping list
- 1 teaspoon salt shopping list
- 1/2 cup sugar shopping list
- 1 teaspoon mustard seed shopping list
- 1 teaspoon dried dill weed shopping list
- 1/4 teaspoon celery seed shopping list
- 1/2 cup white vinegar shopping list
How to make it
- Microwave directions: In a large bowl, combine cucumbers, onions, celery, carrot, bell pepper, garlic and salt, mix thoroughly.
- In clean a pint or quart canning jars, pack the vegetable mixture into the jars, leaving room just below the neck of the jar for liquid to be added.
- In 4 cup microwave-safe measuring cup or bowl combine all remaining ingredients. Microwave on HIGH for 2 to 3 minutes or until mixture boils. Stir to dissolve sugar. Pour hot vinegar mixture over vegetables; cover with tight-fitting lid. Invert jar; then turn upright to distribute spices evenly. Let cool and then refrigerate at least 24 hours to blend flavors before using. Store in refrigerator.
