Zuppa Toscana (olive Garden)

- 1 pound mild Italian Sausage (bulk or casings removed) shopping list
- 2 cups diced potatoes shopping list
- 1 cup chopped onion shopping list
- 1/3 cup real bacon bits shopping list
- 2 cloves garlic, minced shopping list
- 2 cups baby spinach, washed and chopped shopping list
- 1 tablespoon chicken base, or to taste shopping list
- 32 ounces water or low sodium chicken broth shopping list
- 1/3 cup half and half shopping list
How to make it
- 1. Cook Sausage and onions until sausage is done. Remove as much fat as you can with a wad of paper towels. Then add your garlic, and bacon bits. Cook and stir for 3 minutes. Add potatoes, water or broth and base to pan. Bring to a boil, turn down to a simmer. Simmer 15 minutes. Add spinach and half and half, simmer another 4 minutes.
- 2. Serve with Parmigiano Reggiano or Pecorino Romano cheese.
