How to make it

  • Saute the diced sausage and ham in olive oil and 1 tbs of butter until it browns ans releases it oils.
  • Add a touch of olive oil and saute the peppers and onion if using fresh cayenne pepper add it now. Season with salt and pepper if you are using dried cayenne powder add it with the salt and black pepper.
  • When the onions start to become translucent then add the garlic. When you start to smell the garlic De glaze with the wine if using wine. when the wine reduces and thickens.
  • Add the rest of butter and bring back to a simmer reduce the heat to low and sprinkle the flour to create a roux. Continuously scraping the bottom and mixing to prevent scorching. Cook about 3 to 5 minutes and add the tomatoes. Bring to a boil and then reduce to a simmer until cooked about 40 minutes.
  • Remove about 1/3 of the sauce to a serving bowl and keep warm. Add the slightly under cooked pasta to the pot with the sauce simmer about 2 to 3 minutes until the pasta has reached the desired texture.
  • Garnish with fresh chopped parsley. Serve the remaining sauce on the side for extra and some grated cheese to.
