Feta With Salad Tomatoes On Toast

- 60ml/2fl oz Extra Virgin Olive Oil shopping list
- 1 small Red Onion - finely and thinly sliced shopping list
- 4 Large Salad/Vine Tomatoes - cut into 5mm/2in thick slices shopping list
- 250g/8oz Feta cheese - crumbled shopping list
- 2tbsp basil - finely chopped shopping list
- 2tbsp flat leaf Parsley - finely chopped shopping list
- 4 slices Granary/Ciabatta bread shopping list
- Salt and freshly ground black pepper shopping list
- Optional: Sugar - for sprinkling shopping list
How to make it
- Place the olive oil, onion, basil, parsley and a little salt to taste in a little bowl and gently mix together;
- Leave to allow everything to marinate together;
- Heat the grill to high;
- Lay the tomato slices on a plate and season with salt and pepper;
- If using sugar, sprinkle a little over the tomatoes - The sugar will add additional sweetness and help soften the tomatoes a bit;
- Toast the bread slices on one side;
- Turn them over and add the cheese, spreading equally all over each slice;
- Return under the grill until the cheese softens;
- Remove the slices from the grill, top each with tomato slices, then onion and basil/parsley mixture;
- Finally, spoon a little of the marinaded oil over each slice;
- Serve.
