How to make it

  • Place the olive oil, onion, basil, parsley and a little salt to taste in a little bowl and gently mix together;
  • Leave to allow everything to marinate together;
  • Heat the grill to high;
  • Lay the tomato slices on a plate and season with salt and pepper;
  • If using sugar, sprinkle a little over the tomatoes - The sugar will add additional sweetness and help soften the tomatoes a bit;
  • Toast the bread slices on one side;
  • Turn them over and add the cheese, spreading equally all over each slice;
  • Return under the grill until the cheese softens;
  • Remove the slices from the grill, top each with tomato slices, then onion and basil/parsley mixture;
  • Finally, spoon a little of the marinaded oil over each slice;
  • Serve.
