How to make it

  • Melt the lard/dripping on a gentle heat in a large frying pan, add the onions and, stirring frequently, cook on a low medium heat for some 3 to 5 minutes or so until softened a bit and lightly brown;
  • Add the oatmeal bit by bit, mixing in well till it absorbs the fat then add a little more;
  • Season with a little salt and pepper and continue cooking, stirring occasionally, for a further10 minutes or so or until the oatmeal is slightly crisp and golden and to consistency and taste required;
  • Season to taste with salt and pepper;
  • Serve.
