Saucey Stuffed Peppers

- 1 lb hamburger shopping list
- 1 medium onion - diced shopping list
- one carrot-shredded shopping list
- 1 tbs olive oil shopping list
- salt, pepper, garlic powder to taste shopping list
- 1 28 oz jar tomato sauce shopping list
- 1 cup of rice - cooked to package instructions shopping list
- 3 large bell peppers shopping list
- 1 cup shredded cheddar shopping list
How to make it
- Preheat oven to 350
- Brown hamburger over medium heat in large skillet until no longer pink - drain and keep on the side
- Wipe out skillet
- Saute onion and carrots with seasoning in olive oil over medium heat until onion is translucent - about 5 minutes
- Add the tomato sauce and hamburger
- Simmer covered 20 minutes
- Add rice and mix together
- Slice peppers in half the long way, so each pepper makes two stuffed halves
- Place in caserole dish and add 1/4 of water to bottom
- Stuff with beef rice mixture
- Top with cheddar
- Cover tightly with foil and bake 20 minutes
- Uncover and increase oven to 375
- Bake 15 minutes or until cheese is melted and starting to brown
