No Bake Energy Bites

- 1 Cup (dry) oatmeal, quick cooking or old fashioned shopping list
- 2/3 cup toasted coconut flakes shopping list
- ½ cup peanut butter shopping list
- ½ cup ground flax seed shopping list
- ½ cup chocolate chips or cocoa nibs (optional) shopping list
- 1/3 cup honey or agave nectar shopping list
- 1 tablespoon Chia seeds (optional) shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- 1. Stir all ingredients together n a medium bowl until thoroughly mixed, cover and chill in the refrigerator for 30 minutes.
- 2. Once chilled, roll into balls of whatever size you would like (mine were about 1” in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
- 3. Makes about 20 to 25 1” balls.
- Note: I would wait an hour if you can. that way they are more solid and easier to work with.
- Also I pressed mine into the scoop to make the more solid. otherwise they tend to kind of be crumbly.
