How to make it

  • Combine all of the above except the roast.
  • Trim fat to 1/4 inch
  • Rub mixture over beef and place in fridge for four hours or longer.
  • Preheat oven to 450.
  • Remove roast from fridge one hour before placing in oven, bring to room temp.
  • Place cooling rack on cookie sheet.
  • Put roast on rack.
  • Add water to cookie sheet.
  • Place roast in oven for 15 mins, reduce the heat to 350 and continue cooking until internal temp is 140
  • Remove from oven and tent for 10 mins.
  • Carve and serve
