How to make it

  • Add a Tbsp of butter to a skillet an medium low and render the oils out of the pancetta. Then remove the pancetta and reserve it for later.
  • Saute the onion until they are very soft add a sprinkle of smoked paprika and add the garlic. When you begin to smell the aroma of the garlic season with salt and pepper.
  • If you are using the wine add the wine now and allow it to cook off and evaporate. Return the pancetta to the saute and continue to the heat on a medium low flame.
  • Add the slightly undercooked spaghetti to the skillet with the saute add the oregano and continue to combine.
  • Add a cup of the pasta water you don't want a soupy pasta. Cook a little more taste and adjust with black pepper and salt if needed. The pancetta is salty so be careful with the salt. When the pasta is aldente plate and serve.
