Pasta With Onion And Pancetta

- 1/4 Lb Diced Pancetta shopping list
- A light sprinkle of smoked Paprika shopping list
- Extra Virgin Olive oil shopping list
- Unsalted butter shopping list
- 1 Large Onion Sliced Thin shopping list
- 2 Garlic cloves Sliced Fine shopping list
- A splash of white wine shopping list
- 1 Sprig Fresh Oregano Minced Fine shopping list
- Salt shopping list
- black pepper shopping list
- 1 Lb Spaghetti shopping list
- Pasta water 1 To 2 Cups shopping list
How to make it
- Add a Tbsp of butter to a skillet an medium low and render the oils out of the pancetta. Then remove the pancetta and reserve it for later.
- Saute the onion until they are very soft add a sprinkle of smoked paprika and add the garlic. When you begin to smell the aroma of the garlic season with salt and pepper.
- If you are using the wine add the wine now and allow it to cook off and evaporate. Return the pancetta to the saute and continue to the heat on a medium low flame.
- Add the slightly undercooked spaghetti to the skillet with the saute add the oregano and continue to combine.
- Add a cup of the pasta water you don't want a soupy pasta. Cook a little more taste and adjust with black pepper and salt if needed. The pancetta is salty so be careful with the salt. When the pasta is aldente plate and serve.
