How to make it

  • Heat a dutch oven or heavy pot with enough oil to saute the gagootza onion.
  • When they start to soften add the garlic. When you smell the aroma of the garlic add salt and pepper to taste. Add the bay leaf and the tomato.
  • Bring it to a boil and reduce it to a simmer. Taste and adjust with seasoning if needed.
  • When tender Make little spaces and drop an egg in each space you can sprinkle with some cheese then just cover and let the eggs poach I like all the eggs on the soft side not hard but its how ever you like them.
  • Place a piece of Italian bread in a wide bowl ladle the with the gagootza and a egg on top. Manga!

    Cuz hmm iz that a word.

    Gagootz is an Italian-American word for zucchini. It derives from the name of an Italian squash cucuzza. I eat a lot of gagootz. I love it in a frittata (egg pie), baked with a savory rice and ground meat stuffing, fried and marinated, or in a dish similar to eggplant alla parmigiana.

    I regret to inform you that I had the measles when my teacher taught phonetics in Grade School
    ~but~
    It wouldn't matter all that much...very minute really!
    Cuz' I am quite sure if this was your Grandmother's recipe it was a cucuzza...

    I think a simple saute of olive oil,butter and garlic would be nice.
    but...then,no one should ever dispute or disparage a Grandmother's recipe...specially if that Grandmother is Italian...or...ya' just might get whacked with a wooden spoon and disbarred from the kitchen...and no zeppola...that should teach ya' :o)
