How to make it

  • Heat oven to 425F
  • Place peaches, onion and garlic, cut side up (where applicable!), on a parchment-lined baking sheet and drizzle with oil.
  • Roast for 25 minutes, shaking pan halfway through.
  • In a large pot, combine the vinegar, sugar and honey and bring to a simmer, stirring to dissolve the sugar.
  • Add the remaining ingredients and the roasted mixture and simmer 25-30 minutes.
  • Puree with an immersion blender until smooth and can 15 minutes in a water bath.
