How to make it

  • Pat the Buffalo Steak until reasonably dry,oil all sides,season with salt.
  • Have a cast iron skillet smokin'...then sear the steak about two minutes per side.
  • Remove the steaks to a platter...Mine has a Bison relief in the center,but any serving platter that one might have will suffice I reckon.
  • Tent with foil,and allow to rest for a spell.
  • When the steak is cooked to your likin' then deglaze the pan with one cup apple cider,two tablespoons apple cider vinegar,and tablespoon of whole grain mustard,simmer pan sauce until reduced to a glaze,spoon over Buffalo steak and serve immediately.
  • Before you prepare your Buffalo Steak you might like something to have it accompanied by...
  • A Dish...made of windfall apples,about four peeled,cut,and quarted,then cut in eighths,coat in a bit of oil and dash with salt,then peel and slice lenthwise into planks about four sweet potatoes,coat with oil and dash with salt,then peel and slice about four shallots,coat with oil and dash with salt...Lay 'em on a baking sheet and crank the oven to hot,about four hundred and twenty five degrees,and allow these to meet the heat for about thirty minutes,or,until they show a deep hue,then turn down the heat to about three hundred and seventy five degrees...take some of the roasted windfall apples and lay then gently in the bottom of a buttered baking vessel,top them with some of the sweet potatoes,then top the sweet potatoes with some of the shallots,season with pepper,dot with butter and goat cheese,and add a tad of whole grain mustard,repeat the layers in threes,or,however you please...when you have it all topped off compress the dish slightly,then finish the top with butter and goat cheese...bake for about thirty minutes,or,until there is a reddish brown top.

  • A Bread...made of flour,peanut butter,sugar,shortening,milk,eggs,leavings,peanuts,crisp fried bacon.
  • Indian Pudding...made of milk,corn meal,box elder syrup,butter,salt,spices,bake and then topped with cream,dewberries,elderberries,snowberries.
