How to make it

  • Preheat the oven at 350%. Lightly grease the bottom of a baking pan with oil to prevent burning.Lightly salt and pepper the salmon and put into the pan.
  • Take 1/2 of the diced garlic and ginger and saute with a little oil until softened. Set on the side and let cool. When the garlic and ginger is cool rub it into the salmon and bake for about 18 minutes.
  • While the salmon is baking prepare the hoysin plum sauce. Saute the remaining garlic and ginger in oil. Add a splash of vinegar and let The vinegar cook off. Add the chili paste, oyster sauce, hoysin and plum sauces and bring back to a simmer.
  • Add a little chicken broth to loosen up the sauce to a lighter consistency.Then add the soy sauce to taste. When the fish is done after 18 minutes remove from oven. Check that the center of the salmon is not completely cooked through. Put the sauce on top and return back to the oven about 5 minutes. Remove Garnish with plenty of scallions plate and serve.
  • If when you check the salmon after the 18 minute time and the salmon is completely cooked through just add the sauce on top garnish and serve.
  • I find 18 minutes baking time always works for me and the salmon is just under cooked but.
