How to make it

  • Wash jars and lids.
  • Wash beets and remove stems and place in a large pot.
  • Cover with water and bring to a boil.
  • Reduce heat and cook until beets are tender, about 20-25 minutes depending on the size
  • Drain, reserving the beet water.
  • Cool, peel and slice, about 1/4 inch thick.
  • Fill each jar with beets, leaving about 1/2 inch head space.
  • Strain beet water through cheese cloth.
  • Combine 1 cup of beet water, sugar, vinegar, pickling salt and cloves. You may have to repeat this step.
  • Heat until brine boils.
  • Pour the hot brine over the beets in the jars
  • Put the lids and rings on the jars, don't over tighten.
  • Prepare hot water bath and process for at least 10 minutes.
  • Remove from hot water bath and let the jars sit, undisturbed until cool.
