Pickled Beets

- 5 pounds Small Fresh beets , as fresh as possible shopping list
- 1 cup Water Reserved ,or more shopping list
- 1 cup Granulated Sugar shopping list
- 2 cups white vinegar shopping list
- 1-½ teaspoon Pickling Salt shopping list
- ¼ teaspoons Ground cloves shopping list
How to make it
- Wash jars and lids.
- Wash beets and remove stems and place in a large pot.
- Cover with water and bring to a boil.
- Reduce heat and cook until beets are tender, about 20-25 minutes depending on the size
- Drain, reserving the beet water.
- Cool, peel and slice, about 1/4 inch thick.
- Fill each jar with beets, leaving about 1/2 inch head space.
- Strain beet water through cheese cloth.
- Combine 1 cup of beet water, sugar, vinegar, pickling salt and cloves. You may have to repeat this step.
- Heat until brine boils.
- Pour the hot brine over the beets in the jars
- Put the lids and rings on the jars, don't over tighten.
- Prepare hot water bath and process for at least 10 minutes.
- Remove from hot water bath and let the jars sit, undisturbed until cool.
