Kitchen Sink Chili

- 1 1/2 to 2 Lbs Ground Meat of choice shopping list
- 8 Red beans Optional shopping list
- 1/2 Large Onion diced shopping list
- 1/2 bell pepper diced shopping list
- 1 Stalk celery diced shopping list
- 2 Habanero Peppers diced shopping list
- 3 Garlic cloves diced shopping list
- An equal amount of Ginger as Garlic shopping list
- 1 Tbsp Chopped Fresh Oregano Or 1 Tsp If Dry shopping list
- 1 Tsp Paprika shopping list
- 1/2 Tsp cinnamon shopping list
- 1 Tbsp unsweetened coco powder shopping list
- 2 Tbsp brown sugar shopping list
- 1/2 Tsp black pepper + shopping list
- 1 Tsp Salt + shopping list
- 1 Tbsp Worcestershire sauce shopping list
- 1 Tbsp apple cider vinegar shopping list
- 1 Cup Tomato Paste shopping list
- 12 Ounces beer shopping list
- cheddar cheese Grated shopping list
- Extra Virgin Olive Oil shopping list
- Sour cream shopping list
- Fresh cilantro optional shopping list
How to make it
- On a medium flame heat a heavy skillet or dutch oven and lightly cover the bottom with olive oil.
- Add the onion, diced, bell pepper, celery, habanero with a little salt and pepper. When they begin to soften add the garlic, ginger and saute another couple of minutes constantly stirring.
- After about 2 minutes add the paprika, cinnamon, coco, sazon, brown sugar. If you are using dried oregano add it now. Mix it in well and add the vinegar and allow it to evaporate. Add the Worcestershire sauce allow to mix in.
- Now add the tomato paste and mix it in well bring it to a simmer. Add the chop meat. Allow the meat to loosen and mix in bring it to a simmer and then add the beer. Allow it to return to a simmer allow it to simmer about 5 or 6 minutes and the beer to cook down.
- Add the beans mix well if you are using fresh oregano add in now. Mix again and cover the pot lower the flame to low and allow it to cook about 40 minutes to 1 hour. Mixing every 10 minutes or so. Taste and re season with salt and pepper if desired. Serve in a bowl topped with grated cheddar cheese and dollop of sour cream sprinkle of fresh cilantro if desired.
- You can allow the last 40 minutes to finish in a 350 degree F oven.
