How to make it

  • Dry the tuna and season with salt and pepper.
  • Dredge the seasoned tuna in flour add rub the flour in.
  • In a heavy skillet on high heat add equal amounts oil and butter to lightly cover the bottom.
  • When hot sear each steak in the center of the skillet individually for 1 to max 2 minutes per side. You will probably need more oils for the second steak. When seared set aside for later.
  • Caramelize the onion in the skillet when the onion is caramelized add the garlic.
  • After about two minutes and the garlic begins to soften add the vinegar and stir occasionally until the vinegar clings to the back of a spoon.
  • Add the thyme i tbsp butter and mix well check for additional seasoning. Return both steaks to the skillet and cook about 1 minute each side.
  • Remove immediately dress with the onions, vinegar reduction, garnish with thyme and serve.
