Chicken Potpie Pennsylvania Dutch Style

- 2 quarts water shopping list
- 32 oz. low sodium chicken broth (or homemade) shopping list
- One 3 to 3-1/2 pound chicken (whole or cut up) shopping list
- 2 celery ribs, chopped shopping list
- 1/2 medium onion, chopped shopping list
- 1 teaspoon crushed dried rosemary (or fresh if you have it) shopping list
- Salt and pepper to taste shopping list
- 4 medium potatoes, cut into cubes shopping list
- 1/4 cup chopped fresh parsley shopping list
- 16 oz. PotPie squares (Bott Boi) or Bow Tie Pasta (if you do not want to make your own) shopping list
- Pot pie dough: (If you want to make your own) Do not use the Potpie squares or Bow Ties if you do this. shopping list
- 2-1/2 cups all-purpose flour, not sifted shopping list
- 1/2 teaspoon salt shopping list
- 3 large eggs shopping list
- 1 tablespoon cold water shopping list
- Mix 2 cups of the flour with the salt, eggs and water. Work in enough of the remaining 1/2 cup flour to make a stiff dough. Knead about 10 minutes. shopping list
- Roll dough on a lightly floured surface into as thin a sheet as possible. shopping list
- Cut into 2-inch squares. Set aside until needed. (Place in single layers and separate with waxed or parchment paper.) shopping list
How to make it
- Cook chicken in simmering water and broth with celery, onion, rosemary, salt and pepper until tender, about 1-2 hours. (I usually start out on a medium boil and reduce to simmer).
- Remove chicken from broth. When cool enough to handle, remove chicken from bones, discard skin and bones, and cut into bite-size pieces.
- Taste broth for seasoning and add more salt and pepper if needed.
- While chicken is cooling add potatoes to broth.
- Add cut up chicken to broth.
- Add Pot Pie squares or Bow Ties to broth.
- Cook until desired doneness. I like mine a bit firm.
- Add fresh parsley right before you are ready to serve.
- You want this to have some broth, so you may have to add more water or chicken broth.
- I like to serve it with coleslaw or applesauce and biscuits.
