Tasty Salmon Patties

- 1, 15 oz can good quality canned salmon, drained and bones removed shopping list
- 1 Tbs capers finely chopped shopping list
- 2 eggs shopping list
- 12 saltine crackers finely crushed in fine crumbs shopping list
- 1 Tbs lemon juice shopping list
- salt and pepper to taste , I like Old Bay Seasoning shopping list
- Panko breadcrumbs or regular breadcrumbs shopping list
- olive oil/butter to saute shopping list
How to make it
- remove bones from salmon
- mash salmon with a fork until smooth
- Stir in remaining ingredients to blend well
- cover mixture and chill 30 minutes or overnight
- Form into 6 cakes
- Coat both sides in panko bread crumbs
- In a non stick pan, melt some butter and olive oil ( a few Tbs )
- brown salmon cakes on each side, turning to cook brown golden
- Serve with lemon, tartar sauce etc.
