How to make it

  • remove bones from salmon
  • mash salmon with a fork until smooth
  • Stir in remaining ingredients to blend well
  • cover mixture and chill 30 minutes or overnight
  • Form into 6 cakes
  • Coat both sides in panko bread crumbs
  • In a non stick pan, melt some butter and olive oil ( a few Tbs )
  • brown salmon cakes on each side, turning to cook brown golden
  • Serve with lemon, tartar sauce etc.
