How to make it

  • Preheat oven to 200c/fan 180c/400f/fan 360f/gas 6
  • Lay filo sheet on clean work surface and cut into 4 equal slices;
  • Brush the top of each with oil and stack, oil side down, rotating the slices so they don’t completely overlap one another;
  • Repeat with remaining filo sheets and oil to create 6 stacks;
  • On each parcel, now spoon on 1tsp marmalade in the centre, top with a goat’s cheese semi - circle, 1tbsp walnuts, thyme leaves and lemon zest - to taste;
  • Season with salt and pepper and pinch the pastry together to cover the filling and make a parcel;
  • Repeat with 5 other parcels;
  • Place the parcels on a lightly oiled baking tray and cook in the oven for some 12 to 16 minutes or so until golden all over;
  • Serve immediately.
