Goat's Cheese And Onion Marmalade Parcels

- Goat’s cheese and Onion Parcels shopping list
- 6 Large Sheets Filo Pastry - Pack Suitable shopping list
- Extra Virgin Olive Oil - for brushing shopping list
- 3 x 100g/3½oz - rind-on Goat’s cheese rounds - each cut in half to make semi - circles shopping list
- 2tbsp Red Onion Marmalade shopping list
- 6tbsp Walnuts - chopped shopping list
- 6 Sprigs Thyme - leaves only shopping list
- 1 to 2 Lemons - Zest only - to taste shopping list
- Salt and freshly ground Black shopping list
How to make it
- Preheat oven to 200c/fan 180c/400f/fan 360f/gas 6
- Lay filo sheet on clean work surface and cut into 4 equal slices;
- Brush the top of each with oil and stack, oil side down, rotating the slices so they don’t completely overlap one another;
- Repeat with remaining filo sheets and oil to create 6 stacks;
- On each parcel, now spoon on 1tsp marmalade in the centre, top with a goat’s cheese semi - circle, 1tbsp walnuts, thyme leaves and lemon zest - to taste;
- Season with salt and pepper and pinch the pastry together to cover the filling and make a parcel;
- Repeat with 5 other parcels;
- Place the parcels on a lightly oiled baking tray and cook in the oven for some 12 to 16 minutes or so until golden all over;
- Serve immediately.
