Leone’s V/s Vinaigrette Dressing

- Ingredients: shopping list
- ½ cup olive oil. shopping list
- 2 egg yolks. shopping list
- 1 garlic clove, mashed real fine. shopping list
- 1 tsp. powdered mustard. shopping list
- Pinch of fresh ground pepper. shopping list
- Juice of 1 lemon. shopping list
- 1 tsp. finely chopped capers. shopping list
- 2 Tbs. red wine vinegar. shopping list
- Salt to taste. shopping list
How to make it
- 1. Beat egg yolks in a bowl. Don’t be lazy here. See Photo
- 2. Add the garlic, mustard & pepper. Mix well.
- 3. Mix the oil in slowly.
- 4. Add lemon juice & capers & mix well.
- 5. Add vinegar & mix well.
- 6. Add salt to taste & mix.
- 7. Put in a suitable bottle & refrigerate.
- Makes about one cup. This will last eons in the fridge. See Photo
- Serve this over cold Asparagus, Cauliflower, Broccoli, Brussels Sprouts, Artichokes & Artichoke Hearts, etc. See Photo
