Royal Icing - Gingerbread Houses

- 3 egg whites, at room temperature shopping list
- 4 1/2 cups powdered sugar shopping list
- 1/2 teaspoon cream of tartar shopping list
- pinch of salt shopping list
- few drops of vanilla extract (optional) shopping list
How to make it
- Using a electric mixer w/stand and the whisk attachment, beat the egg whites, powdered sugar, cream of tarter and salt on medium-low speed until blended. Add the vanilla (if desired) and increase speed to medium-high (6 on stand mixer) and continue to beat until stiff peaks form and mixture nearly triples in volume - 8 minutes.
- Cover tightly until ready to use. Best to use disposable cake decorating bags with tips and seal until ready to use.
- Allow to set for at least 6 hours before decorating houses.
- One batch will assemble six small houses.
