How to make it

  • Put butter, eggs,yolks,sugar, salt, vanilla, zests, Cognac, and sour cream together in a bowl and with the whisk attachment on your stand up mixer...beat on medium speed until pale and thick...about ten minutes...reduce speed to low and gradually add enough flour to form a fairly stiff dough...turn out dough onto a floured work surface...work with the dough until it blisters,and becomes elastic,and can be handled easily...about ten minutes with addition flour if needed...Divide into four pieces,and as your work each and every piece keep the others covered to keep them from drying out...roll the dough to one eight inch thick...if it should become elastic while rolling,then cover with glad wrap and allow to rest for about fifteen minutes...Cut out wings with a leaf shape cookie cutter and place on a parchment paper lined cookie sheet,layering wings between sheets of parchment paper...Have the oil at three hundred and seventy five degrees...Now is where your 'Angel' gets the 'Wings'...You gently stretch the leaves ever so slightly so that they curl while in the cooking oil...you will turn them in the oil occasionally until they are a pale golden color,about three minutes...when the wings have gained the shade that you desire then transfer to paper towel lined sheets to drain and cool...sprinkle with confectioners sugar...and then a few delicate sprinkles of heavenly sugar.
