Antipasto Pasta Salad Recipe
Definitely not your same old pasta salad. This combo of meat, pasta and cheese along with a delicious homemade dressing is perfect for any picnic and a salad everyone will enjoy.

Ingredients
  • 1 pound pasta, seashell variety
  • 1/4 pound pepperoni sausage, diced
  • 1/4 pound Genoa salami, diced
  • 1/2 pound Asiago cheese, finely chopped
  • 1 (6 oz) can black olives, liquid removed and chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, finely chopped
  • 3 tomatoes, diced
  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp Parmesan cheese, grated
  • 1 (.7 oz) packet dry Italian-style salad dressing mix
  • 2 tbsp dried oregano
  • 1 tbsp dried parsley
  • salt and ground black pepper, to taste

Directions
  1. In a large pot of salted water, boil the pasta until al dente. Drain, and run under cold water to cool.
  2. Mix together the cooled pasta, pepperoni sausage, salami, Asiago cheese, black olives, peppers and tomatoes. Add in the dressing mix then cover, and place in the refrigerator for at least 1 hour.
  3. To make the dressing, whisk together the olive oil, balsamic vinegar, Parmesan cheese, oregano, parsley, salt and pepper. Right before serving, add the dressing onto the salad, and mix thoroughly.
