Penne With Zucchini And Ricotta

- 2 zucchini shopping list
- 1 tbsp. butter shopping list
- 150g ricotta,( perferably sheep's milk ) shopping list
- 180g penne pasta shopping list
- olive oil, for drizzling shopping list
- salt to taste. shopping list
How to make it
- Cut the zucchini into strips
- Bring a pot of salted water to a boil
- Melt the butter in a heavy pan, add the zucchini and a pinch of salt
- Cook stirring often, until brown
- Add the ricotta and 1-2 tbsp. of the pasta water,and continue to cook until the ricotta melts
- Meanwhile cook the penne in the boiling salted water
- When al dente, drain and toss into the frying pan with the zucchini over medium heat, 2 minutes, remove from heat, add a drizzle of olive oil and serve.
