How to make it

  • Cut the zucchini into strips
  • Bring a pot of salted water to a boil
  • Melt the butter in a heavy pan, add the zucchini and a pinch of salt
  • Cook stirring often, until brown
  • Add the ricotta and 1-2 tbsp. of the pasta water,and continue to cook until the ricotta melts
  • Meanwhile cook the penne in the boiling salted water
  • When al dente, drain and toss into the frying pan with the zucchini over medium heat, 2 minutes, remove from heat, add a drizzle of olive oil and serve.
