Garlic Lamb & Broccoli Stir-fry

- • 1 pound lean lamb, thinly sliced. shopping list
- • 2 - 3 Tbs. dark soy sauce. shopping list
- • 4 Tbs. peanut oil. shopping list
- • 1 Tbs. rice wine or sherry. shopping list
- • 4 – 5 mushrooms, sliced. shopping list
- • 1 tsp. salt. shopping list
- • 1 tsp. crushed Sichuan pepper (substitute crushed red pepper if unavailable). shopping list
- • 2 garlic cloves, finely chopped, to taste. shopping list
- • 1 cup broccoli florets. shopping list
- • 4 scallions, chopped. shopping list
- • 1 Tbs. rice vinegar. shopping list
- • 1 Tbs. sesame oil. shopping list
How to make it
- 1. Lay the slices of lamb in a shallow dish. In a bowl, mix together 2 Tbs. of the soy sauce, 2 Tbs. of the peanut oil, the rice wine/sherry, salt, and Sichuan pepper. Pour the mixture over lamb, and turn to coat. Let marinate for 30 minutes, turning at least once. A bit longer is better.
- 2. In a wok, heat remaining 2 Tbs. of peanut oil until smoking, then add the lamb and garlic. Stir-fry for 2 minutes just until lamb changes color on both sides, then remove from wok and set aside.
- 3. Leave 1 Tbs. of oil in wok and pour out excess. Add the broccoli, mushrooms and scallions and stir-fry for 2 minutes. Add the rice vinegar and remaining soy sauce and cook for another 1 minute. Return the lamb to the wok, add sesame oil, and stir-fry for another 1 to 2 minutes, until the lamb, broccoli, and sauce are thoroughly mixed. Serve immediately.
- Some steamed rice or buttered pasta, with a nice green salad goes well. I usually sip some Sake with this but a dry Riesling won’t go amiss.
