Octopus With Sauce - Oxtapothi Me Saltsa

- • 1 octopus weighing about 3 lbs. (1.5 kg.) shopping list
- • 1 cup olive oil shopping list
- • 2 cloves garlic shopping list
- • 1 lb. chopped onion shopping list
- • 1/2 cup red wine shopping list
- • 1 1/2 lb., (700g) peeled and diced tomatoes. shopping list
- • Water as needed in step 5. shopping list
- • Pepper, to taste. shopping list
How to make it
- 1. Clean and wash the octopus and put into a saucepan without adding water. Cover and allow to simmer for 10 minutes; drain and peel off the skin.
- 2. Cut octopus into small pieces and return to the saucepan See Photo. Add the oil, garlic and onions.
- 3. Sauté for a few minutes over high heat.
- 4. Pour over the wine and when it has almost evaporated, add the tomatoes and pepper.
- 5. Cover and cook very slowly for about 2 hours or until tender and the sauce is thick. Keep an eye on the liquid in the pot and add a bit of water as needed.
- 6. Serve with rice, pasta or mashed potatoes. Rice is best.
