Homemade Pork Sausage

- • 1 lb ground pork. shopping list
- • 1 tsp. salt. shopping list
- • 1⁄2 tsp. ground black pepper. shopping list
- • 1 1⁄2 tsp. sage. shopping list
- • 1 3⁄4 tsp. thyme leaves. shopping list
- • 3⁄4 tsp. savory. shopping list
- • 1 tsp. fennel. shopping list
- • 1⁄4 tsp. dried mustard. shopping list
- • 1⁄8 tsp. ground clove. shopping list
- • 1⁄4 tsp. crushed red pepper flakes. shopping list
- • 1⁄8 tsp. cayenne. shopping list
How to make it
- 1. Put all the spices in a small bowl and mix them up with your fingers.
- 2. Work it into the pork after sprinkling it all over the meat. Try not to mash it too much, otherwise the sausage will be too tight. Dough hooks on your stand mixer will work. See Photo
- 3. Form the sausage into the size of patties you want. There will be some shrinkage when you cook these. See Photo
- 4. Place the patties on a cookie sheet, covered in wax paper, until it’s full.
- 5. Add another sheet of wax paper and another layer of patties, until all sausage mix is used up.
- 6. Put into the freezer for three or four hours.
- 7. When the patties are frozen, remove them from the cookie sheet and pack as you like. A resealable bag works well.
- 8. Return to the freezer.
- These take about an hour to thaw at room temp. Move a few from the freezer to the fridge for easy use. They’ll last about 5 days in the fridge and a very long time in the freezer.
