Lemon & Walnut Crusted Cod

- • Two ½ lb. (250 g) cod filets. shopping list
- • 2 Tbs. lemon juice. shopping list
- • ¼ cup loosely packed fresh parsley leaves. shopping list
- • 1½ tsp. lemon rind (zest). shopping list
- • Dash of salt. shopping list
- • 2 Tbs. butter, melted. shopping list
- • ¼ cup finely chopped walnuts. shopping list
- • 2 Tbs. breadcrumbs. shopping list
How to make it
- 1. Preheat oven to 425 F. (220 C).
- 2. Place cod in a baking pan and drizzle with lemon juice.
- 3. In a bowl, mix parsley, lemon peel, breadcrumbs, walnuts salt and pepper. Add butter and stir until combined.
- 4. Spread about 2 Tbs. of walnut topping onto one side of the fish filets.
- 5. Bake 15 minutes or until cod flakes with a fork and crumbs are golden.
- I like this with a baked or boiled potato with a dab of sour cream and lightly sautéed zucchini squash See Photo. Chewy Italian bread and a Pouilly Fume are a must.
