How to make it

  • 1. Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 – 30 minutes.
  • 2. Heat a wok with 1 tsp. of the oil.
  • 3. Lift the steak from the marinade, let drain and sear, in batches, then remove to drain.
  • 4. Add a bit more oil and fry the ginger until golden.
  • 5. Add the spring onions and pineapple, and return the steak to the pan.
  • 6. Stir for 1 min, to heat through then add any remaining marinade.
  • 7. Keep stirring until the marinade becomes thick and everything is hot.
  • 8. Serve over rice, sprinkled with coriander.
  • Brown rice worked well. We had a large green salad instead of cooked greens. I couldn’t resist a jug of baijiu.

    Hi Elgourmand! I learned a trick from King Sparta on Allrecipes about how to tenderize beef for stir fries (marinate with a little - not too much - baking soda - and rinse). I tried it and it actually worked. I can't find his original post, but I did find a review by Cathy Myers who also tried his method: http://dish.allrecipes.com/ask-the-community/question/311118/
