Beef, Pineapple & Ginger Stir-fry

- • 1 lb. (500g) rump steak, thinly sliced. shopping list
- • 3 Tbs. light soy sauce. shopping list
- • 2 Tbs. soft brown sugar. shopping list
- • 1 Tbs. Chinese chilli sauce. shopping list
- • 1 Tbs. rice wine vinegar. shopping list
- • 2 tsp. vegetable oil. shopping list
- • Thumb-sized piece ginger , grated. shopping list
- • 4 spring onion , cut into 1 in. (2.5 cm) lengths. shopping list
- • 7oz. (200g) pineapple , cut into chunks. shopping list
- • Handful coriander leaves, to serve. shopping list
How to make it
- 1. Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 – 30 minutes.
- 2. Heat a wok with 1 tsp. of the oil.
- 3. Lift the steak from the marinade, let drain and sear, in batches, then remove to drain.
- 4. Add a bit more oil and fry the ginger until golden.
- 5. Add the spring onions and pineapple, and return the steak to the pan.
- 6. Stir for 1 min, to heat through then add any remaining marinade.
- 7. Keep stirring until the marinade becomes thick and everything is hot.
- 8. Serve over rice, sprinkled with coriander.
- Brown rice worked well. We had a large green salad instead of cooked greens. I couldn’t resist a jug of baijiu.
