Fried Oysters – Louisiana Style

- • 1 doz. lg. shelled oysters. shopping list
- • Salt and FG pepper to taste. shopping list
- • Yellow cornmeal, about a cup. shopping list
- • Oil for frying; 3 in. (5.5cm) in your skillet or wok. shopping list
- • 1 medium lemon, halved and wrapped in cheese cloth. shopping list
- • A bottle of Louisiana style hot sauce may be required. shopping list
How to make it
- 1. Remove oysters from the jar and let drain. Reserve the juice for a fab Bloody Mary.
- 2. Season oysters with the salt and pepper. Add any other spices you feel like but remember KISS.
- 3. Heat the 3 in. (5.5cm) of oil to 380 F (190 C).
- 4. Dredge oysters in cornmeal, slip into hot oil (do not crowed) and fry 2-3 minutes. Do not overcook, they get tough.
- 5. Let drain on paper towels. See Photo
- 6. Serve with lemon. See Photo
- 7. Save the leftover cornmeal for Hocakes.
- Louisiana fried oysters sorta says chips (French fries) but I didn’t feel chippy. GRITS See Photo. Too bloody right. A glass of decent white and you’re set. Don’t forget the hot sauce.
