- • 1 cup flour. shopping list
- • 1 cup cornmeal. shopping list
- • 1 tsp. baking powder. shopping list
- • ½ tsp. baking soda. shopping list
- • 2 eggs. shopping list
- • 1 Tbs. sugar. shopping list
- • 3/4 cup buttermilk. shopping list
- • 1/3 cup plus 1 Tbs. water. shopping list
- • 1/4 cup vegetable oil or bacon grease. shopping list
- • Oil or butter for frying. shopping list
How to make it
- • Mix all ingredients, except for the frying butter or oil.
- • Heat the frying oil or butter in a medium or large skillet over medium heat.
- • Drop the batter, by full tablespoons, into the hot skillet. Use about 2 tablespoons of batter per hoecake.
- • Fry each hoecake until brown and crisp; turn with a spatula, and brown the other side.
- • Remove each hoecake to drain on a paper towel-lined plate. Leftover batter will keep in refrigerator for up to 2 days.
