How to make it

  • 1. Combine first 8 ingredients in a medium bowl, stirring with a whisk to combine.
  • 2. Dredge chicken in breadcrumbs.
  • 3. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add chicken and cook 3 to 4 minutes on each side or just until lightly browned on both sides. Add broth mixture; cover; reduce heat and simmer, stirring occasionally for 4 to 5 minutes or until chicken is done and the juices run clear. Sprinkle with parsley to serve.
  • Notes: I omitted the broth by accident but because it turned out so well I won't be adding it back. I did use fresh squeezed orange juice because I had extra orange juice. I only had sugar free marmalade so added 1 teaspoon honey.

    I changed the sauce amounts to make a larger amount of sauce. also omitted the broth by accident. but turned out so well I won't be adding in future either. LOL! Now I did use fresh orange juice because I had extra oranges I needed to use up.
