Orange Sauced Chicken (myrecipes.com)

- 1 cup fresh orange juice (changed from 1/4 cup) shopping list
- ¼ low sodium chicken broth (i omitted the chicken broth) shopping list
- 4 teaspoons orange marmalade (changed from 3/4 teaspoon) shopping list
- 4 teaspoons fresh lemon juice (changed from 1 teaspoon) shopping list
- 4 teaspoons cornstarch (changed from 3/4 teaspoon) shopping list
- 1/2 teaspoon dried crushed rosemary, or 1 teaspoon fresh shopping list
- 1/4 teaspoon salt shopping list
- ¼ teaspoon fresh ground black pepper shopping list
- 4 (4oz) boneless, skinless chicken breast halves shopping list
- 1 cup tablespoon dried Italian seasoned breadcrumbs shopping list
- 2 tablespoons olive oil shopping list
- 1 tablespoon chopped fresh flat leaf (Italian) parlsey shopping list
How to make it
- 1. Combine first 8 ingredients in a medium bowl, stirring with a whisk to combine.
- 2. Dredge chicken in breadcrumbs.
- 3. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add chicken and cook 3 to 4 minutes on each side or just until lightly browned on both sides. Add broth mixture; cover; reduce heat and simmer, stirring occasionally for 4 to 5 minutes or until chicken is done and the juices run clear. Sprinkle with parsley to serve.
- Notes: I omitted the broth by accident but because it turned out so well I won't be adding it back. I did use fresh squeezed orange juice because I had extra orange juice. I only had sugar free marmalade so added 1 teaspoon honey.
