How to make it

  • 1. Prep the stuff: Slice, dice, peel, etc.
  • 2. Put the butter in your cast iron skillet and heat it up.
  • 3. Put in the cubed potatoes and cook until ¾ done.
  • 4. Add the corned beef, spices, salt & FG pepper.
  • 5. Cook and stir until potatoes are done.
  • 6. Turn heat down to low, make two shallow wells in the mixture.
  • 7. Put an egg in each well.
  • 8. Cover and cook until the eggs are done, three to four minutes.
  • 9. Serve.
  • I served this with sliced fresh ripe tomatoes and grits. See Photo
