Corned Beef Hash

- • 2 cups cooked real corned beef, shredded. shopping list
- • Good quality potatoes, peeled & cut into small cubes, about 2 cups. shopping list
- • 1 small onion, chopped. shopping list
- • A pinch of nutmeg, to taste. shopping list
- • ½ tsp. basil. shopping list
- • 1 tsp. parsley. shopping list
- • 1 Tbs. butter. shopping list
- • 2 large eggs. shopping list
- • Salt & FG pepper to taste. shopping list
How to make it
- 1. Prep the stuff: Slice, dice, peel, etc.
- 2. Put the butter in your cast iron skillet and heat it up.
- 3. Put in the cubed potatoes and cook until ¾ done.
- 4. Add the corned beef, spices, salt & FG pepper.
- 5. Cook and stir until potatoes are done.
- 6. Turn heat down to low, make two shallow wells in the mixture.
- 7. Put an egg in each well.
- 8. Cover and cook until the eggs are done, three to four minutes.
- 9. Serve.
- I served this with sliced fresh ripe tomatoes and grits. See Photo
