Creamy Ham & Spinach Pasta Bake

- • ½ lb. (200g) cooked ham, chopped. Any cured and/or smoked lean pork will do. shopping list
- • 1 lb. (400g) short pasta, elbow, spirals, bowties, etc. shopping list
- • 1 medium onion, fine chopped. shopping list
- • 3 ½ Tbs. butter. shopping list
- • ½ cup plain flour. shopping list
- • 2 cups milk. shopping list
- • 3 large handfuls of fresh spinach, washed, drained and course chopped. Think I used five. shopping list
- • 2 large handfuls of grated cheese. I used half Swiss and half mozzarella. Whatever suits. shopping list
- • Salt & FG pepper to taste. shopping list
How to make it
- 1. Add the pasta to boiling, slightly salted water and cook for 8-9 minutes. Drain.
- 2. Meanwhile, peel and finely chop the onion.
- 3. In a decent sized pot gently heat the butter and add the onion. Fry gently until soft but not browned, approximately 5 minutes.
- 4. Remove the onion from the pan and reserve. Add a little more butter if needed, melt and stir in the flour. Add the milk. Stir until bubbling, then cook gently for a further 2 minutes.
- 5. Pre-heat the oven to 375° F. (180° C).
- 6. Combine the pasta with the sauce mixture and onion.
- 7. Chop the ham into strips or cubes and stir into the pasta mixture, along with the chopped spinach. Season to taste.
- 8. Pour the pasta mixture into an oven-proof dish, sprinkle with the cheese, and bake for 20 minutes.
- 9. Serve with salad and crusty bread.
