How to make it

  • 1. Add the pasta to boiling, slightly salted water and cook for 8-9 minutes. Drain.
  • 2. Meanwhile, peel and finely chop the onion.
  • 3. In a decent sized pot gently heat the butter and add the onion. Fry gently until soft but not browned, approximately 5 minutes.
  • 4. Remove the onion from the pan and reserve. Add a little more butter if needed, melt and stir in the flour. Add the milk. Stir until bubbling, then cook gently for a further 2 minutes.
  • 5. Pre-heat the oven to 375° F. (180° C).
  • 6. Combine the pasta with the sauce mixture and onion.
  • 7. Chop the ham into strips or cubes and stir into the pasta mixture, along with the chopped spinach. Season to taste.
  • 8. Pour the pasta mixture into an oven-proof dish, sprinkle with the cheese, and bake for 20 minutes.
  • 9. Serve with salad and crusty bread.
