Mom's Cherry Cheesecake

- Topping: shopping list
- 2 c. cherries shopping list
- 6 tbsp. sugar shopping list
- 3 tbsp. cornstarch shopping list
- 1/4 tsp. red food color shopping list
- 1/4 tsp. almond flavor shopping list
- 1 tbsp. lemon juice shopping list
- Crust: shopping list
- 2 c. graham cracker crumbs shopping list
- 1/4 c. sugar shopping list
- 1/4 c. butter shopping list
- cheese Filling: shopping list
- 1 2/3 c. evaporated milk or whipping cream shopping list
- 3 tbsp. lemon juice shopping list
- 1 pkg. unflavored gelatin shopping list
- 3 tbsp. cold water shopping list
- 3 oz. cream cheese shopping list
- 1 c. powdered sugar shopping list
How to make it
- For the topping, mix all together and boil until slightly thickened. Cool.
- For the crust, melt butter in pie pan or 8x8 pan, mix crackers and sugar in with it, and press in bottom of pan.
- For the filling, soften gelatin in cold water. Stir until dissoved OVER hot water, do not add hot water to it! Let cool. Have evaporated milk chilled, whip until stiff. Add lemon juice and blend. Blend sugar and softened cream cheese, then add gelatin. Fold with whipped milk or cream. Pour into crust. Allow to set for at least 10 minutes. Spread cherry topping over all, and chill.
