How to make it

  • •Heat the shortening to 375 degrees in a deep fryer or a large pot.
  • •Season the chicken pieces by sprinkling with salt and pepper.
  • •Mix the egg, milk, hot sauce and teaspoon of salt in a shallow bowl.
  • •Mix the flour with the rest of the spices in a shallow bowl or a deep plate.
  • •Coat each piece of chicken in the flour and spice mixture, followed by the egg mixture. Then return to the flour mixture for a second coat.
  • •Once coated, place immediately into the hot shortening to fry.
  • •Fry for about 15 minutes, then let drain on a towel.
  • •Sprinkle with a dusting of paprika.
