How to make it

  • Cook noodles as package directs; drain.
  • Meanwhile, in butter in skillet, saute beef until browned. (*I used olive oil instead of butter). Stir in tomato sauce. Remove from heat.   • Combine cottage cheese, cream cheese, sour cream, scallions and green peppers. (*I used lower fat versions of all of the cheeses. I also used red pepper instead of green because that was what I had in the fridge.)
  • In a 2 qt. casserole, spread half of the noodles; cover with cheese mixture;
  • ...then cover with rest of noodles. Pour melted butter over noodles, then tomato-meat sauce. Refrigerate.
  • (*I sprinkled a little bit of low fat cheddar cheese on top too.)
  • About 1 hour before serving, start heating oven to 375 degrees. Bake casserole 45 min. Makes 6 servings.

    This was very good. I had a "Company's Coming to Dinner" casserole at a restaurant and am attempting to make a casserole as close to that recipe as possible.

    I made a few changes. I omitted the butter, both for sauteing the ground beef and for pouring over the noodles. I used red pepper instead of green because that's what I had. I found that what I thought was a container of cottage cheese in the fridge was a container of sour cream, so I subbed in Greek yogurt for the cottage cheese. This worked well and alleviated my concern regarding the texture of the cream cheese mixture.

    Changes I plan to make next time: I'll triple the bell pepper, use green bell pepper and julienne the pepper instead of mincing it. I'll add more to the cheese mixture, probably another 4 ounces of cream cheese or add another cheese, and more Greek yogurt. I'll cook the pasta a bit longer. I cooked the egg noodles for 9 minutes (what the directions specified) and while they mixed in well with the cream cheese mixture, they didn't melt into it the way the recipe at the restaurant did.

    This is easy to make ahead and heat to serve when needed. DH rated it a 5-star recipe. With a salad and some type of bread, this would be a great choice for a make-ahead meal for family or company.
