Crockpot Thai Peanut Chicken

- • 2 lbs, skinless, boneless chicken. shopping list
- • 1 small red or orange bell pepper, seeded and sliced. shopping list
- • 1 small yellow bell pepper, seeded and sliced. shopping list
- • 1 white onion, chopped. shopping list
- • ½ cup chunky peanut butter. shopping list
- • 1 Tbs. lime juice. shopping list
- • ½ cup chicken broth. shopping list
- • ¼ cup Saki, Dry vermouth or white wine. shopping list
- • ¼ cup light soy sauce. shopping list
- • 2 Tbs. of honey. shopping list
- • 1/4 cup crushed peanuts for topping. shopping list
How to make it
- 1. Place peppers and onion at the bottom of the crock pot. This will act as a “stand” for the chicken, so it doesn’t dry out.
- 2. Next place chicken on top.
- 3. In a bowl, mix together peanut butter, lime juice, chicken broth, wine, soy sauce, and honey. Pour sauce over chicken.
- 4. Cook for 3-4 hours on HIGH or 6 on LOW. When 15 minutes remains of cooking time, shred chicken with two forks. Cover and continue cooking for the remainder of the time. Remove from crock pot and serve over brown rice or noodles.
