German-inspired Reuben

Though New York claims to be the home of the famous Reuben sandwich, they are actually created using German ingredients. A lovely German lass served me the first homemade Ruben I ever had in Hawaii, a long time ago. Read more She said the best Rubens are made using Westphalian ham. Westphalian ham is created from pigs fed with acorns and cured, then slowly smoked over beech wood and juniper. No can do here but the ham from the smoke-shack, done over local hardwood, works fine, and my homemade sauerkraut goes perfectly. Makes 2 sandwiches. See less
Ingredients
- • 4 slices pumpernickel bread. shopping list
- • 1/3 cup mayonnaise. shopping list
- • 2 tablespoons ketchup. shopping list
- • 1 small pickle, minced. shopping list
- • 4 ounces Westphalian ham. shopping list
- • 1/2 cup sauerkraut, drained and patted dry. shopping list
- • 2 slices Tilsiter cheese. Can sub Gouda if necessary. shopping list
How to make it
- 1. Preheat broiler. Toast the bread to your liking.
- 2. In a small bowl, mix together the mayonnaise, ketchup, and pickle. Spread one side of each bread slice with the mayonnaise blend.
- 3. Pile ham on one slice of bread, and cover with the sauerkraut. Top with the cheese.
- 4. Broil open faced until the cheese melts. Top with the other slice of toasted bread.
- 5. Slice on the diagonal and serve.
- A good Pilsner is the only thing to wash a Ruben down with.
