Ingredients

  • • 2 fresh, FIRM Aku fillets (6-8 oz. each), skin, bones and blood-groove removed. Trust me, old, mushy fillets just won’t work. You’ll get gloop. shopping list
  • • 1/2 small Maui onion, thinly sliced or chopped. Can sub any mild white onion. shopping list
  • • 2 Tbs. thinly sliced Spring onion, green and white parts. shopping list
  • • 2 tsp. minced ginger. shopping list
  • • 1 - 4 small nīoi (Hawaiian Bird’s Eye chili peppers), seeded and chopped. To taste. shopping list
  • • ½ cup light shoyu (soy sauce) or 2 Tbs. dark and 6 Tbs. light soy. shopping list
  • • 1 tsp. sesame oil. shopping list
  • • Salt to taste. shopping list
  • • 1 tsp. sesame seeds, toasted. Optional. **See note below. shopping list
  • • 1/2 cup blanched and chopped limu kohu. Hawaiian seaweed. You may find this at an Asian grocery. **See note below. shopping list
  • • 2 tsp. ground, roasted kukui nuts. **See note below. shopping list

How to make it

  • 1. Cut all the rubbish off the Aku fillets and cut the fillets into 3/4-inch cubes. See Photo
  • 2. Prep the rest of the ingredients: slice, dice, seed the peppers, chop, etc. See Photo
  • 3. In a large bowl, combine ginger, chili pepper, shoyu, sesame oil and salt; mix well.
  • 4. Add the Aku, limu, Maui onion and green onion and stir lightly to combine.
  • 5. Chill for several hours, stirring gently two or three times.
  • 6. Toast sesame seeds by heating in a heavy frying pan, stirring constantly until lightly browned. Sprinkle over poke and serve.
  • **Kukui (candle) nuts and limu may be hard for you to find. I’ve eaten gallons of Poke without either of these and it was still great. If you can’t find them don’t worry. The toasted sesame seeds are a nice touch but do give thw poke a sesame flavor and are certainly not critical.
  • Note #2. I say inexpensive and here it is. I pay about $4.00 for a 10 lb. Aku and get about 4 lbs. of fillets. My dog and cat get the rest. The Kukui nuts, chili peppers, ginger and limu are free. Here, Poke Aku isn’t so much served as just eaten. Help yourself when you’re peckish.
