Hawaiian Huli-huli Chicken

- • 3 medium or two large chickens, halved or cut into pieces. shopping list
- • 1/3 cup ketchup. shopping list
- • 1/3 cup soy sauce. shopping list
- • 1/4 cup brown or raw sugar. shopping list
- • 1/4 cup honey. shopping list
- • 1/4 cup sherry. shopping list
- • 1 Tbs. sesame oil. shopping list
- • 1-2-more pieces ginger root, crushed, to taste. shopping list
- • 3 cloves garlic, crushed. shopping list
- • Worcestershire sauce to taste. shopping list
- • Sriracha or Asian chili paste (or red pepper flakes) to taste. shopping list
- • Squeeze a lemon in if you've got one. shopping list
How to make it
- 1. Prep the chicken.
- 2. Combine the marinade ingredients in a resealable plastic bag and mix well.
- 3. Add the chicken, squeeze out as much air as you can, seal and marinate chicken for at least 30 minutes. Most cooks leave it an hour or two.
- 4. Get your BBQ going with a medium hot fire.
- 5. Remove the chicken from the marinade to the fire.
- 6. Brush the chicken with the remaining marinade while cooking. See Photo
- 7. Cook until just done (don’t overcook) and don't forget to huli the chicken. See Photo
- Potato or macaroni salad are the usual side dishes.
