Chili And Chili Con Frijoles

- For The Chili: shopping list
- • 1 lb. (460 g.) About 2 cups, Mexican pulled beef or pork. shopping list
- • ½ cup Mexican Chorizo, removed from casing. shopping list
- • 1-2 Tbs. Olive oil. shopping list
- • 1 Tbs. Chili powder; mild or hot as you like. shopping list
- • 1 tsp. dried Cumin. shopping list
- • 1 tsp. Coriander. shopping list
- • 2 Tbs. Cornmeal. shopping list
- • ½ tsp. dried Oregano. Some like more but this isn’t Italian. shopping list
- • 2-3 tsp. paprika. shopping list
- • 1-2 medium bell or Anaheim pepper, course chopped. For flavour not heat. shopping list
- • 1 tsp. dried Parsley. shopping list
- • 1 medium onion, chopped fine. shopping list
- • ¼ tsp. minced garlic. shopping list
- • 1 cup sliced mushrooms. Optional. shopping list
- • 2-3 cups beef or chicken stock. Can sub 1 cup of beer for 1 cup of stock. shopping list
- • 1 tsp. Worcestershire sauce. shopping list
- • How hot do you want it? As many hot peppers as you like. Jalapeno, Bird’s eye, habanero, etc. Careful when using these, they bite. shopping list
- • 1 can of chopped tomatoes or 1½ cups chopped fresh tomatoes. OPTIONAL. shopping list
- For the Con Frijoles: shopping list
- • Omit 1 cup of the beef or chicken stock from above and add 2-4 cups of cooked beans, Pinto, Red, Black, etc.; plus one cup of bean juice. shopping list
How to make it
- 1. Prep your stuff. Slice, dice, chop, etc.
- 2. Make or buy your Mexican pulled beef or pork. See Photo
- 3. Heat the olive oil in a decent skillet and sauté the Chorizo, onions, bell pepper and mushrooms (if using), until Chorizo is done and onions are soft but not browned.
- 4. Put everything but the beans in your Crock Pot, stir to combine well, turn it onto low and go surfing for 8-10 hours See Photo. If you’re around, give it a stir after a few hours.
- 5. If you’re doing the con frijoles (with beans) option, add the room temp beans to the pot, and stir well, at least an hour before you plan to serve the dish. Two hours is better.
- For us, the sides are simple. A large tossed green salad, with all the add-ins, and lots of tortillas, corn and flour.
