How to make it

  • 1. Prep your stuff. Slice, dice, chop, etc.
  • 2. Make or buy your Mexican pulled beef or pork. See Photo
  • 3. Heat the olive oil in a decent skillet and sauté the Chorizo, onions, bell pepper and mushrooms (if using), until Chorizo is done and onions are soft but not browned.
  • 4. Put everything but the beans in your Crock Pot, stir to combine well, turn it onto low and go surfing for 8-10 hours See Photo. If you’re around, give it a stir after a few hours.
  • 5. If you’re doing the con frijoles (with beans) option, add the room temp beans to the pot, and stir well, at least an hour before you plan to serve the dish. Two hours is better.
  • For us, the sides are simple. A large tossed green salad, with all the add-ins, and lots of tortillas, corn and flour.

    Good starting recipe. I like it, or liked it, right up until you started adding beans. Now I can accept that, but prefer to stay away from them.
    What about a spoon or two of instant coffee and/or cocoa in there, with the beer?
    A bit more garlic, say some celery?
    Again, I like mine a bit more "Mexican", where the meat is more like stewing beef, but can add ground beef. This is not meant as a critiscm...we all eat it a bit differently, and nothing wrong with anyone's ideas!
