How to make it

  • Preheat Oven to 200c/400f/Gas 6;
  • Toss the asparagus, pancetta, oil, salt and pepper together in an oven proof dish or oven foil dish - large enough to accommodate the asparagus in a single layer ;
  • Once laid as required with the pancetta sprinkled over, roast the asparagus, turning once or twice, in the oven for some 15 to 20 minutes or until the asparagus is tender and the pancetta golden;

    Aspargus is probably my favourite veggie to eat during summer time. Pancetta is just like bacon - it makes everything better :)
