How to make it

  • 1 Peel and smash the garlic, and sauté in the butter and oil over medium heat, careful not to brown. Add red chile flakes, and season to taste.
  • 2 Add the tomatoes and vodka bring to a boil. Reduce the heat and simmer, covered, for about 25 min. Meanwhile, cook the pasta to just al dente.
  • 3 Take the sauce off the heat and purée. Mix in the dairy, Parmesan and a small splash of vodka. Stir in the pasta and parsley to finish.
