Mimi's Pecan Pie

- Single pie crust - best to use shortbread recipe, or regular pie crust works well also shopping list
Filling
- 1 cup sugar shopping list
- 1 cup light corn syrup shopping list
- 1 teaspoon vanilla extract shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 4 eggs, beaten - set aside in separate bowl shopping list
- 1 stick (1/2 cup) salted butter shopping list
- 2 1/4 cups pecan halves shopping list
How to make it
- Preheat oven to 350 degrees.
- If using shortbread crust, prepare it by pre-baking the crust. If using regular pie crust (line the crust with pie weights to keep from shrinking).
- In a one-quart sauce pan, cook butter over medium heat. Stir often for approximately 5-6 minutes until butter forms and turns brown. Set aside.
- In miking bowl using balloon whisk, beat together corn syrup, sugar, vanilla, salt, and cinnamon. Add egg mixture until smooth.
- Slowly add cooked butter and whisk to combine (scrape sides often to mix all ingredients.
- Stir in pecans and add to prepared pie crust.
- Bake for 50-60 minutes (making sure filling is set: slightly jiggly, but not runny). Cool completely on cooling rack 3-4 hours before serving.
