New Year Soup

- Pound of bacon, chopped shopping list
- 1 T real maple syrup shopping list
- 1 C diced vidalia onion shopping list
- 1 C chopped celery shopping list
- 2 T minced garlic shopping list
- 8 oz frozen corn shopping list
- 8 oz frozen okra shopping list
- 1 can diced tomato with jalapeno shopping list
- 15 oz can petite diced tomato, drained shopping list
- 1 can black eyed peas, drained shopping list
- 1.5-2 C beef broth shopping list
- 1 T creole seasoning shopping list
- Salt and pepper shopping list
How to make it
- Cook bacon on med-high to almost crisp, adding pepper to taste. Add maple syrup near the end and stir.
- Set aside bacon, reserving 2 T grease in the pot.
- Cook onion, garlic and celery in bacon grease over medium heat until veggies begin to soften.
- Add thawed okra to pot, stir to cook until it starts to get slimy (because that is what it does), then add all tomatoes and corn.
- Reduce heat to med-low, add creole seasoning and beef broth. Simmer about 15 minutes covered. (If making ahead, stop here or the peas and bacon textures will be lost.)
- Add peas and simmer about 10-20 minutes. Salt to taste (keep in mind you are adding bacon).
- Just before serving, return the bacon to the pot and heat through.
- Optional, serve over seasoned brown rice (cooked using vegetable broth in lieu of water, with 1 tsp creole seasoning per cooked cup of rice).
