How to make it

  • Cook bacon on med-high to almost crisp, adding pepper to taste. Add maple syrup near the end and stir.
  • Set aside bacon, reserving 2 T grease in the pot.
  • Cook onion, garlic and celery in bacon grease over medium heat until veggies begin to soften.
  • Add thawed okra to pot, stir to cook until it starts to get slimy (because that is what it does), then add all tomatoes and corn.
  • Reduce heat to med-low, add creole seasoning and beef broth. Simmer about 15 minutes covered. (If making ahead, stop here or the peas and bacon textures will be lost.)
  • Add peas and simmer about 10-20 minutes. Salt to taste (keep in mind you are adding bacon).
  • Just before serving, return the bacon to the pot and heat through.
  • Optional, serve over seasoned brown rice (cooked using vegetable broth in lieu of water, with 1 tsp creole seasoning per cooked cup of rice).
