How to make it

  • For the compote

  • Roughly chop the three peaches
  • In a saucepan stir together the peaches, brown sugar, lemon juice, star anise, and vanilla extract
  • On medium heat bring the mixture to a steady simmer, stirring occasionally
  • Allow the compote to reduce to your desired richness, about ten minutes
  • The Pancakes

  • Stir together the dry ingredients; oat flour, white flour, truvia, baking powder, brewer's yeast and spices.
  • In a separate bowl whisk together the eggs, peach purée and milk. Add quickly in to the dry mixture and mix until just combined. There will be lumps.
  • Heat a griddle on medium low heat, and brush with a little coconut oil.
  • Drop batter by heaping tablespoons on to the griddle, and flip when well browned. Allow the pancake to brown on the second side.
  • Serve with peach compote and Greek yogurt.
  • I sprinkled a little icing sugar for the photo.
